Brewing a brown ale. 2 gallon boil. Recipe includes:

1/6 lb Munich light
1/4 lb brown malt
1/2 lb carapils - briess
.12 lb chocolate grain

seep - 30mins @150

3lbs Muntons amber DME
3lbs Muntons light DME

2oz Kent Golding hops - 1oz start of boil, .5 oz @ 45 mins (along w/ irish moss), 1/2 oz 2 mins before flameout.

I like hoppy beers with a little bite. I was thinking I might do a late extract addition to better my hops utilization. Realizing this is not a hop heads recipe (what can I say? trying to keep my friends happy too - not everybody I know likes my high grav. double IPA's like I do!). Does this sound like a good plan to get a little "extra" bite? Or maybe some other hops, possibly dry hopping in secondary? Will this screw up my recipe? What would be a good hop to go with this?

Also, if I were doing a late extract addition with 1/2 of the DME, does it matter if I use the light or amber for the late addition? What will the differences be?

Thanks!

Kent Goldings is a great hop for English brown ales, but you won't get a "bite" from it. Your recipe is already at the high end for IBUs, any more and it will be more of a bitter than a brown. If you want an American Brown, switch to citrus hops, like Cascades or Amarillo.
