Hello!

I do realize that probrewer is probably the more appropriate place for this question, but I'm hoping to get an answer quicker than it will take for them to approve my new account to post on their forums.

I'm doing a feasibility study for my management class and have decided to use my future brewery as the centerpiece. I'm currently looking into the amount of equipment I'll need and my question is, if I'm fermenting my ales for 2 weeks and then transferring to a bright tank... and I'm unable to sell out of what's currently in a bright tank designated for both carbonating and serving... can I put more of the same beer that's just finished fermenting into what's left over in the bright tank?

Seems like a very newbish question to me, but please go easy!

An average gravity ale should be done fermenting in less than a week.

If you need a free bright tank for a scheduled brew why not just fill kegs with what's left?
