I'm getting started with brewing, especially moonshine, and I'm looking for potentially reading a book or two to learn not only about the brewing process, but also the history and culture of brewing. I've heard good things about the books from Matthew Rowley (Lost Recipes of Prohibition: Notes from a Bootlegger's Manual and Moonshine!), but I'm open to other suggestions as well as any recommendations for one of those books or the other.
 
If you want to brew BEER, then Palmer's "How to Brew" is a good place to start.

If you want to delve further into the art and science of brewing, then Randy Mosher's "Mastering Homebrew" is a very good book.

You also could benefit from reading the series Water, Malt, Hops, and Yeast. Four books, they get somewhat into the science of what's going on. They were instrumental in helping me understand more deeply what's going on in brewing, and how I might alter the outcomes.
