Hasl anyone brewed Old Draft Dodger Barleywine?
It is a massive barleywine.
My starting gravity is 1.130,
I pitched a 1 liter starter with white labs 007.
it has been in primary for about 14 days, and gravity is 1.052
Target final gravity should be 1.032.
I was wondering if i should use champagne yeast to finish off fermentation?
this beer will be barrel aged in a bourbon barrel, so im not too concerned about champagne yeast contributing fruity flavors. does anyone have any other suggestions or experience with brewing high gravity beers?
 
I have brewed the DFH 120 and it calls for a secondary pitching of WLP099 high gravity yeast during the fermentation process. That is while adding sugar, but I would think you could probably do another 1L starter and pitch at about 1.050 or so to help it finish up.
