I've been away from brewing for a long time, but decided to get my feet wet again. Starting from a True Brew all malt amber kit, consisting of:
3.3 lb. Munton hopped amber lme
2 lb. Munton light dme
1 oz. UK First Gold (8%) hops
1 pk. Munton dry yeast

My first thought was the yeast sucked swampwater, and have replaced with Safale US 05. I will also be adding another lb. of Breiss golden light, and 1/2 lb. honey malt.

Even though the lme is hopped, is a single ounce of hops enough?
 
It depends on how hoppy you want your beer, of course. With the ingredients you listed and your additions, .5oz of First Gold hops @ 45min and .5oz @ 10 min for aroma (including the IBUs from the extract) will give you about 45 IBUs. That's assuming you're using a 4 gallon pot, boiling down to 3 gallons and topping off with cold water.
