This is my second batch since Xmas, first was an Amber Ale. My basic question on the Scottish is, how long to ferment or when should I open the bucket to take a FG reading. I was originally going to wait three weeks as proposed in some posts here. Just wondering if two weeks would be good to take a reading (1/28). Still new at this. Don't want to open the fermenter unnecessarily.
