This is my second batch since Xmas, first was an Amber Ale. My basic question on the Scottish is, how long to ferment or when should I open the bucket to take a FG reading. I was originally going to wait three weeks as proposed in some posts here. Just wondering if two weeks would be good to take a reading (1/28). Still new at this. Don't want to open the fermenter unnecessarily.

Three weeks is better than two. I usually let my Scottish go 4 weeks before bottling.

It depends a bit on the recipe, but the more complicated it is, more dark grains etcetera, the more time you should give it for the flavors to meld.

Hop-dominant recipes with a simple malt bill can be bottled sooner. YMMV.

Nothing wrong with taking the reading at two. Heck, it's a data point. I'd wait for three tho. The more times you open and put something into the wort/beer.. the more chance for problems. Be sure to SANITIZE whatever you put in there.. inside and out.
 
Thanks. I will probably wait two more and see how the reading is. I am slowly learning that patience is all important in this hobby.
