Recently got a deal on two Extract Kits. One was BB Pumpkin Spice Porter Extract Kit. I was hoping some of you with some experience and a few of you Old School Brewers (OSB) would offer advice and in-depth reasons why I should or shouldn't use a part of a recipe.

Original Recipe Ingredients

FERMENTABLES

6.6 Ib. Porter LME
.5 Ib. Maltodextrin

Specialty Grains

4oz. Caramel 90L
8oz. Carabrown
8oz. Dark Chocolate

Hops
1oz Northern Brewer
1oz Willamette

Special
Spice Pack

Yeast
1 Sachet

Times

- 20 min Grain Steep

- Start add all LME, Maltodestrin, Northern brewer Hops.

- 40 min in Willamette Hops

- 50 min in add spice pack

- 55 min terminate boil


ABV 5.5-6 abv

My goals

- Deeper more pronounced flavor
- kick it up a notch on the ABV



My ideas and questions

- Add Marsh Mellows, I believe it may add a lingering creamy flavor to the Pumpkin flavor.

- Add a 6-10oz can of organic pumpkin pie filling. Hopefully it will float to the top of the pot...

- Remove random spice pack from BB kit, add Pumpkin Spice following the pumpkin pie recipe on the can.

- Add organic brown sugar and/or honey and/or 3.3 Ib LME.
Q. What kind of flavor profile will I be looking at for each?

- I believe the hops will be able to maintain the right bitterness with the additional ingredients.

- What else would you recommend?
