My name is Ruby. I have done 2x 20L brews of cider. The second one i done on my own. The first i done with my older brother (experienced brewer) i pressed my own pears [first press 3L : second press 5L] and then I added unpreserved apple juice to make the rest of the 20 and so on... what i want to make next is a sour cider! I just need to know how? Any advice appreciated :)
 
Welcome aboard!
Yeast producers make sour blends, I haven't tried them. I have made tart hard cider by simply letting it ferment naturally and spontaneously. The mix of yeast and other organisms living on the fruit will do the job.

Watch that Perry hybrid as if it oxidises turns to nail polish remover quite quickly.
Re your sour use something to kill off native yeast on your fruit and then use some Philly sour yeast.
Do make sure you have some yeast nutrients in your ferment.
What part of NZ?
