Back in the early fall I went up north for a month to work . While I was there I did some hard shopping at my old LHBS and grabbed a couple bagged kits without much thought. One was tagged as a "Belgian Wit" so i grabbed it and today started my brew with it ,taking the usual steps , milling the grain , etc. So here I am water heating , grain milled twice and inside the bag I notice the set of instructions are for an American Pale Ale instead...my bag of grain wasnt pre-milled but it was mixed and packaged along with a 1 lb bag of flaked oats instead of bagged separately and the expected flaked wheat...uh boy. The hops looked more like a Pale ale as well...so I picked up the phone and called them . Told them my situation . Good news is , they hugely apologized for the mix up as it was bagged and instructions for as the APA but tagged outside as the Belgian ...Luckily my stepson is down here for the holidays and lives within 5 miles of the LHBS . They said send him in with my miss-matched tag and instructions and they'll "take care of me" when he comes back in March .
So what I did was omitted the flaked oats and subbed in some winter red wheat of the same weight. I also added the zest and juice of 4 big tangelos . Hops I used out of my sealed library collection which included Mosaic, Citra and Wakatu . All having citrus aromas and 2 of 3 are both aroma and bittering hops. Wort tastes nice and strong -orangey , citrusy /tangy,good bitterness...hoping for a good summer beer for poolside.

1 lb red (winter) wheat
OG came out a solid 1.050 ,and looking for a 6 % abv .
