Brew now or wait?

On the 13th of July I have go on a buisness trip and will be gone for 2 weeks out of the country.

I would like to brew an all grain Kirin Clone but wondering:

- Brew it on Sunday (8th) and put it to secondary on the 12th or

- Brew it on Sunday (8th) and let it sit till the 29th and then secondary or

- Don't brew at all and loose 3 weeks

What advice do you have for me? I don't know if leaving a lager on the trub that long will hurt it or not.

Option 2. Leave in primary for 21 days. People do this all the time and don't even bother with secondary.

No problem with leaving a beer in the fermentor for 21 days.

However, you are brewing a lager and they need to be fermented colder, and then have their temperature raised for the Diacetyl rest.
How will you do this if not present? The temperature is a far bigger problem than the 21 days in the fermentor on the trub (which is not a problem at all)

Have to raise to room temp for DR after you get back. 2 days should be plenty, then secondary/lager if you want.

I have a large freezer I use for fermenting lagers and lagering in. So with your enchouragement I'll plan to go ahead and brew on Sunday and leave it till I get back and at that time I'll do a diacetyl rest.

The first batch of Kirin clone turned out so well I want to get another well underway before the last five is empty. My wife says it's her new favorite brew.

If anything this might be better for a lager because you won't be tempted to mess with it before it's done.
