I sampled my first brett saison last night. It was fermented with 3724 back in May. I pitched Brett C (wlp) when it stalled at 1.030. I bottled a gallon of it about a month ago; the rest will be used for other experiments. I opened a bottle last night. Nice musty aroma, solid carbonation, but the flavor has a light burnt plastic (bandaid) on the back end. Will this fade/change with time?
 
It may change slowly, but you may just be particularly sensitive to that phenol (if anything Brett tends to convert the less "funky" phenols to more funky, e.g., 4VG to 4EG). For my palate I only get Band-Aid and burnt rubber from really hot fermentations (especially 100% Brett). Often sour/funky beers get a little weird for a couple months after bottling. I've also noticed that stirring up the sediment in the pour makes them taste substantially funkier. As the Brett settles, you may perceive it to be cleaner.
 
When I've used wlp645, I've gotten some serious electrical fire smells, but it subsided in a couple months or less. I've had bandaid from another brett strain in secondary and it hasn't gone away even with extended aging. With the smell still there after so long, I'm inclined to think it's not going away. No harm in holding onto it until you need the fermentor for something else, but my guess is it will be a dumper.
