What's the recommended method of using brett on a cider? I want some funk, but I don't want to be floored. I have some wlp650 and wyeast1056 that I was going to use. Is it better to co-pitch, let the 1056 get a head start then pitch brett into primary, or toss brett into secondary? Again, with the hope of getting some brett flavor, but not overwhelming.

I am considering doing an experiment with all 3, but figured some direction would help my decision since I'm only making a 3G batch.

Thanks in advance.

I would use it in primary. I did a 100% dirty dozen cider that was pretty clean with just a hint of funk. Really pretty nice, hint of mustiness on the finish.

Couple years ago I did a us-05 cider with TYB Lochristi in secondary, and it's a complete brett bomb.

If you're considering multiple batches, a good way to go would be one 100% brett, and another with sacch primary/brett secondary. Then blend in just enough of the secondary batch to get the balance you want.

Thanks. I split the batch. 1/3 Brett primary and 2/3 clean primary. 1g will get Brett secondary then I'll blend them all in of getting about 2g. Does the 100% Brett need secondary? I was going to bottle around 10-12 weeks.

In that time frame, none of them really need secondary. Even for the one with Brett in secondary, it would be fine to pitch them both at the same time as the sacch will get going faster and eat up most of the sugars.
