I brewed an RIS (1.090 OG), fermented for 2 months, and racked one gallon onto a small amount of Oak chips that had been soaking in bourbon for about 8 months, I only poured a few drops of actual bourbon in with the chips.
It's been on the chips for 3 months.

When should I bottle? How long until the oak flavor fades? Should I put fresh chips in there for a few weeks before bottling?

I think you're only going to know how much is enough after tasting it. I have no experience with oak, but will be using it soon. From what I've read, 3 months seems to be a long time, but who knows. Either way, you gotta find a way to taste it.
