Bottled on Saturday...

Today is Thursday and the plastic bottles are already hard and the yeast is dropping out. Could it be ready to drink already? (1.047 wheat beer, fermented with T-58 for 3 weeks.)

I was planning to give it a full week, then put a couple of bottles in the fridge for 2 days; leave the rest to condition at room temperature for at least another week.

I'm very tempted to chill one tonight and open it tomorrow.

un-carbonated beer is still beer!

but it could be slightly carbonated by today

Yeah. They'll still be producing Co2 after only one day in the bottles. Give'em time...

It won't kill you if you drink one or two early. I'd rather drink my beer too soon than too late.
