Today is Thursday and the plastic bottles are already hard and the yeast is dropping out. Could it be ready to drink already? (1.047 wheat beer, fermented with T-58 for 3 weeks.)
I was planning to give it a full week, then put a couple of bottles in the fridge for 2 days; leave the rest to condition at room temperature for at least another week.
I'm very tempted to chill one tonight and open it tomorrow.
