True love is bottling with care. Just finished my Cider Hop (gaff). Came out at 5.9% - back sweetened with 24oz AJC.
Tasted it flat and warm. This will be a panty-dropper for sure. It's got a nice bite when it hits the lips, followed by a mild sweetness with absolutely zero ETOH notes on the tongue. Nice mouth feel (lactose) and finishes exceptinally dry.
Can't wait to check the natural carb in a week. Will chill to put the yeasties to bed...then imbibe heavily!
I did not cold crash, nor clear with gelatin. This was a 2.5gal batch with a base of 2 gallons apple juice and .5gal beer wort. We have a winner! My cat...he's a closet drunk.
