Does it make a difference actually putting it into bottles? I've kept some in a sealed carboy, and I just discovered some cider I had bottled. The cider seems to have aged excellently, whereas mead and cider I've kept in carboys still pretty much taste the same. Is it just me or does it have to be done in a bottle?
 
I think you're asking about bottle aging, not conditioning. Bottle conditioning is the term for getting carbonation using priming sugar etc.

But as for aging, I haven't seen much difference between bottles and a sealed carboy.
