I recently brewed a 1 gallon White House Honey extract kit. The direction in the kit said to use half the yeast packet included. I decided to creat a small starter by combining the yeast with the amount of water stated on the actual packet and then pitching half it.
I had a feeling I should start with a blow off hose and cup of sanitizer and I was right. I had blow off within 24 hour and very aggressive bubbling in the cup. Next day the heavy part was done so I switched to my 3pc airlock. Since then I haven't seen any bubbles in airlock. I have noticed what I am assuming is yeast gradually sinking to the bottom every so often.
I have been told not to worry and for most part I am not. Should I be?
Also wondering if I should bottle after the one week minimum fermentation time or wait the full two weeks?
This is only my second brew and first extract so I don't have a lot experience.

I'm about to brew that, too. What was your fermentation temperature? I'm a newbie so I don't have an answer for your other questions :)
 
I would wait two weeks.....or even more, really...3 weeks in a fermentor won't hurt a thing. Do you have a hydrometer? I know it sucks taking gravity samples from a one gallon batch, but that's the surest way to know it's over and done with, or perhaps "stuck"...A hydrometer, a thermometer, and a good sanitizer are a homebrewer's best friends
 
There is no set time period, you need to let all your beers finish fermenting. so 1 week or 2 weeks depends on the beer.

What temp was the beer at during fermentation?

You could have a small leak and thats why you arent seeing bubbles in the air lock.
 
It's been in a closet in a spare room and house been at constant 68F so maybe a little cooler than that. I would say 62-68F. I do have a hydrometer but I think I will wait two weeks and bottle/test at that time. Thanks for replies.
