As an authority on the topic heed my words.
1.There is absolutely nothing wrong with dipping wings in blue cheese.
2. If said wings are hot wings and the dipper dips for the sole reason of being able to eat the hottest hot wings they should be immediately smacked in the face my the person sitting to their right (so the smackers dominate hand may be used).
3. Only good blue cheese may be used. Even in Buffalo much of the blue cheese given out with wings is crap. If crappy blue cheese is served apon tasting confirmed with at least one other member of the party that said blue cheese is in fact crappy the following actions must be taken: 1. Use of the blue cheese must be immediately ceased. 2. Crappy blue cheese reciever may proceed into the kitchen to throw the blue cheese in the cooks face.
4. If someone uses ranch on their wings the person on the left of the individual will kick said person in the crotch.
This is the law.

There, now lock it down! ;). (frequent visitor to the area a decade or so back)

Jeez, I just went back and read all the posts hating on the dippin'. Wow, ok.. Call me a p**sy all you want, but to me wings require 3 flavors: Chicken (esp. chicken fat), wing sauce (not just hot sauce), and bleu cheese. If all you want is heat and an opportunity to prove what a bad ass you are, throw back a few shots of hot sauce.

In my opinion:
Breading on wings is wrong.
Boneless "wings" are wrong.
Hot wings that aren't hot are wrong.
Ranch dipping sauce is wrong.
Wing sauce that does not include butter is wrong.
Baked is better than fried.
Celery is mandatory.

There are precious few places around here that can make a decent hot wing. BTW, Clipper City makes a pretty good wing sauce.

What, seriously? I can't see how ranch could even be in the running. That would be like saying, "What goes better with hamburgers - french fries or dead puppies?" Where bleu cheese is equivilant to french fries and ranch is equal to dead puppies, of course.

HAH! oh man that's hilarious!:mug:

I'm glad to see bleu cheese took such a commanding lead. most places here give you ranch as the default and it annoys me to no end.

I don't understand the insanity of taking a perfectly delicious wing that is covered in a wonderfully high-sodium high-calorie sauce, and then dipping it in ANOTHER high-calorie high-fat sauce! When you dip a baby carrot or celery stick in dressing, that's perfectly understandable. You have something good for you but lacking in deliciousness, and something bad for you but sinfully good. Put a little of the latter onto the former and you've practically got an ethos to live by. Buffalo wings dipped in dressing is madness.

You said it pretty well I think.

Blue cheese all the way for me. I dont use it to mask the hottness or anything, as I dont even think that would work unless you are really soaking the wing good. However, it adds another element of flavor.

Sure, it may be another high fat, high calorie ingredient, but it tastes completely different. It fires off different taste buds. It is like different malts. Why add caramel malt to a beer when you already have other malts in there? Because it adds another layer of flavor.

For the record, I voted blue cheese before I even knew we were talking about wings. Ranch is a stupid dressing all around. I rarely use it. Not on salads or anything.

Bleu Cheese is the nasties! Ranch is da SHIZZLE!!

(note that I have only had bleu cheese once or twice at a restaurant, and that is my basis for comparison. I do have ranch on nearly everything I eat, so I am pretty sure I do like that.)

We serve our Buffalo Wings with bleu cheese dressing and celery.
Some people substitute ranch on their orders.
These are usually the same people that request ranch for dipping or slathering their pizza with as well.

I personally prefer Bleu Cheese on my Buffalo Wings.

Is a person with a username that suggests it ain't even chicken allowed to post on this thread!? Go dip yourself in blue cheese sauce man!! ;)

I've tried blEU cheese many a time, but I just don't like it. Ranch's creamy goodness has always been a comfort to my soul. Ranch it is!

That said, I rarely eat wings. The meat to bone to work ratio is to low.

You must not know how to do it right.:D

Frying > Baking
Blue Cheese > Ranch

I made a batch for the Pats/Jets game last night. Fried them of course and the sauce was BBQ sauce, butter, and Jack Daniels heated separately. Best non-hot wings I've ever had...

Blue cheese, for sure, but it's too bad there's no such thing as a liquid Stilton cheese salad dressing. Imagine, buffalo wings, Stilton cheese dressing, a vintage port wine, and a fine Cuban cigar.

You mean fromage bleu? The French don't make much blue cheese, so I stick to calling it blue cheese. :)

HA! I knew my true friends would come out of the woodwork against the insanity that is blew cheese. Homercidal, Laurel, you're my new bestest friends. In this thread.

Stilton is the bestest blue cheese ever....I'll be damned if I'm gonna call it bleu cheese when it ain't even French!!

PS I also pronounce the "H" in herbs, because, well....it's got a f*cking "H" in it. ;)

I have a buddy that hates crab legs because he says it's too much work to get the meat out. You people are nuts, and blue cheese is gross.

GO RANCH!

I went to the grocery store a couple of days ago and indulged in a cheese buying binge. I bought some Stilton and some Shropshire Blue. They are both wonderful cheeses. I also picked up a California blue called Humboldt Fog. Most of the French cheeses I bought were white surface mold cheeses like the excellent Normandy Camembert and the Bucherondine du Chèvre. But there was one very good French blue cheese I picked up called Bleu d'Auvergne; sharp and pungent with a nice soft spreading consistency.

I wonder if I can successfully culture Penicillium roqueforti for my own cheese?

THANK YOU. That is one of my pet peeves. :D

You need to get a new one, since "blue cheese" is more correct than "bleu cheese". In English, "Bleu" should only be used when referring to specific French cheeses (such as Bleu d'Auvergne), and the general category is "Blue".

Blue Cheese. Its so the celery doesn't taste like sh!t. Don't dip the wings.

Are you kidding Bleu cheese all the way and I love wings...here is my list of places I go.

Monday: Kelly's II in Wind Lake 25¢ wings and you get the entire wing
Tuesday: In Cahoots 5-9pm in Genesis Depot 20¢ wings and the hot wings are HOT
Wednesday: Scores in Racine 25¢ wings
Thursday: In Cahoots 5-9pm in Genesis Depot 20¢ wings or Spinnakers in Racine 25¢ wings

Then you always have Buckets Pub in Racine no specials though

Friday: Fish Fry of coarse

Sometimes I get a side of sauce too then run the wing through Bleu cheese and then more sauce...mmmmmmmmmm
If you run the wing through the sauce first the cheese doesn't stick to good...LOL
Celery is a good break, when you are taking down 20 or 30 wings some times you need a break.

Lets keep in mind that the stuff you dip the wings in isn't really Blue Cheese. Its pretty much sour cream, mayo, and a little cheese crumbled in. With that said, the combination of Buffalo wings and blue cheese dressing makes me salivate just thinking about it. BC FTW...
