So your strike temp was at 175 initially?If so, then yeah that's without a doubt the reason as you denatured a good amount of the enzymes during that period. Surprised it didn't come out a higher FG actually for a 20-30 minute 175 rest period! Gonna be a sweet tasting beer, but still drinkable I'd imagine.

well been drinking the beer, has great flavor, bitter but is a little bit sweet, not what i expected due to the F up in the mash but still very good (well its my first beer i made so i guess i'm bias LOL) the full leaf dry hop with simcoe saved the day i think... very very cloudy though i'm guessing due to the same issue with the mash? I just did the same batch a few days ago and the fermenter "boiled" over into my glass jug (hose down to a jug blow off style) so i'm hoping for a better result on the ABV this time round we'll see in a couple weeks. Heres a pic of the brew i calculated with the refract. about 4.8% weaker than i wanted but still drinkable like you said.
