Birch sap ale

Has anyone made Birch sap ale. I have a few white birch trees. I just learned they can be tapped. I saw few recipes for ale and wine, i want make a batch. Looking for some advice and what it might taste like.

Don't know why you couldn't do it. The Maples are budding in Southeast Ia. Tapping tree time is over.
