I have a batch of RIS and a Belgian triple both expecting Abv of 8-9% the RIS is fermenting about 3 weeks and the belg about two. I use dry safeale I was told at the LHBS to use more yeast should I drop in another pack at this point or leave it under the air lock?
 
I've used many of the safale yeasts at 7 to 8%. Some i've gone to 10% or more. Your LHBS was right to suggest using two packs, so you under pitched, but at this point I'd leave it alone. It'll get there.
