Hi all,

I'm about 5 weeks out of brewing my first AG beer and am totally confused as to what went wrong. I thought everything went alright and hit my target OG but did realize afterwards that I hadn't stirred my priming sugar in--only had poured it in halfway through racking into my bottling bucket. When I opened my first beer about a week after bottling it gushed out and I suspected that I was going to wind up with some very carbonated beers and some flat ones due to the priming sugar issue. I tried 2 or three more on that night and they did the same thing.

The confusing thing is that since then I've opened about 12 more (including ones that were bottled early on in the process and one that were bottled later on)--some that had been in the fridge for over a week--and they're all almost completely flat. Just the slightest wisp when I open them (so it's not like the CO2 hasn't dissolved into the beer yet).

Is it possible that the first 2 or 3 bottles I opened were randomly the super carbonated ones? I'm confused since none of the bottles I've opened since then are carbed up--what happened to all that priming sugar? I used about 4 oz dissolved in boiled water. It's possible that there are other really carbed up beers waiting to be opened but I've opened about 1/3rd of the batch already and haven't seen any since those first bottles I opened

I just completed my first AG today so I have no clue. Only thought is that the sugar did not mix well as you suspect or you went too light on the capper. My personal issue is that I fell short on SG. I am rethinking my mash.

Look forward to seeing better replies. Congrats on your first AG.

It seems unlikely, given what you've described, that your priming sugar wouldn't be reasonably well mixed into the beer.

But we need more information: you made your beer 5 weeks ago, and hit your target OG. What was that? What was your FG? How long has the beer been in bottles, and what temperatures have you kept them at? If you put them straight into the fridge, obviously they won't carbonate.
