There are seveal tables out there with differnet # for potential OG by grain type. Is 1 more reliable?
 
Accurate numbers would be achieved by utilizing the potential extract numbers from the manufacturer for each grain. Apply this in the context of the efficiency of your set-up and there you have the most accurate numbers.
 
No. The grain varies from crop to crop. So its hard to know. The manufacturers website is probably best. Also, grain manufacturers test their crop before distribution, and inform their customers but its unlikely that info gets down to the homebrewer.
