Best Pale Ale EVER!

Hey all,

I have been searching through pale ale recipes trying to find something to brew tomorrow night. My search has been inconclusive, currently I am thinking about the Jamil Pale

Anyone make an excellent AG pale and wouldn't mind sharing the recipe?

I liked my ESB enough that I've brewed it again... Giving serious thoughts to dry hopping it too, not 100% sure there, so you could if you wanted to.

89.72% UK 2 row
7.48% Crystal Maris Otter (55L)
2.80% Victory malt
1oz Target hops (10.50% AA) 60 min
1oz Fuggles hops (4.00% AA) 20 min
1 Whirlfloc tablet 15 min
Scottish Ale (Wyeast Labs #1728) yeast

Dry hops -- 7 days
.5oz EKG
.5oz Fuggles

Mash at 150F for 90 minutes

Estimated OG: 1.068
Estimated FG: 1.019 (should be lower)
Bitterness: 36.8 IBU
Color: 10.4 SRM

Ferment 3 weeks and then add dry hops. If not dry hopping, then leave on the yeast cake 3-4 weeks before bottling.

I used 12# UK 2 Row, 1# Crystal MO, and 6oz Victory in the batch I brewed just over 2 weeks ago. Dry hopping is slated to happen in about another week. I plan to let the hops sit in the brew for ~7 days before bottling it up.

If you don't want to get Crystal MO, then I would use .5# of British Crystal I and .5# British Crystal II to get 1# of 55L crystal malt... I would also increase the Victory malt amount to at least 8oz.

Check out the Can You Brew It Terrapin Rye Pale Ale clone recipe on this site. I recently made it and it is fan-freaking-tastic.

Lake Walk Pale Ale is the best pale ale I've ever tasted. Do a quick search and it will turn up. Wasn't a big fan of Edwort's Haus Pale Ale, but then again, I don't care for Cascades early in the boil or by themselves.

Yoopers is awesome as a straight Pale... and the best part is you can shift different hops everytime you brew to get an idea for hop flavor.

Lake Walk is the best I've had, but it borders with an IPA in hop aroma so be ready for that.

Yup, this beer is delicious. Took a keg of it to a pig roast last weekend and it was the first to go out of 8 kegs.

I've brewed it two or three times.

Lake Walk is another very popular one around here. I really might have to brew that and Yoopers this summer. Or go to Yoopers house and have some that SHE made! (Better idea)

Summit Extra Pale Ale from Minnesota is very nice. I have brewed using the grain bill from Jamils, all amarillo hops and WLP007 and it turned out nice too. However, I like my pale ales to have a little more dark crystal, so i would add a touch of C55 or higher..

A local brewpub gave me their recipe for an alternative to your typical apa and the beer is awesome.

70%pils
30%Maris otter

FWH Amarillo
60 min Columbus
20 min Columbus
Flameout Amarillo
DH Amarillo

Cali ale

OG - 1.053
FG - 1.012
IBU - 45-50

Super simple with big hop flavor. Definitely an extra pale ale in hop presence, but more of a golden color than most APAs.

I've brewed this with many hop combos and it works wonderfully. I didn't add amounts as hop combos can be different and aa% are different every year.

It's an awesome beer. If you back off the ibus that's fine as the malt body is very light. However, don't back off the late additions. It's what makes it so good. All of the aroma and flavor of an IPA, but lower bitterness and easier drinkability.

My favorite hops schedule for a basic pale ale is:

Northern Brewer FWH - adjust to desired IBU - 1.5 oz
Northern Brewer 15 min - 0.5 oz
Cascade 15 min - 0.5 oz
Cascade 0 min - 1 oz
Dry hop if desired with Cascade.

I play with the grain bill, usually:
2-row 90-92% - 10.5lb
CaraPils 4-5% - 8 oz
C-120 4-5% - 8 oz

Mash low - 150

Ferment cool - 62

Yeast - California Ale, US-05, etc
