Just brewed up last night and very excited about this, especially given my previous fails at BW.
17 litres(do not ask).
1kg wmn wheat malt
150gr flaked oats
50 gr crystal wheat
2lb extra light dme
mashed the grains at 66 for 45 mins.
15 minute boil with 10gr of Nelson Sauvin for the 15 minute boil.
cooled,topped up and pitched a huge mad-as-a-hatter sour started of Lacto Brevis by way of Drummerguy and Cascade.
It is now sitting at about 34c and at about hour 70 I will pitch a big started of Belle Saison.
Then, on 5 days from bottling, an 80gr Nelson dry hop.
I cannot wait.
 
Going to try for sourness this afternoon. If it's almost where I want it,in with the Belle Saison.
 
Well,the fermentation went ape!
Tried it for sourness and it is getting there. Floral,tart,hint of honey and white wine.
Did not pitch the yeast yet, I will let it go and try again tomorrow.

I jsut did a berliner from BYO and did the WLP Sour Mix 1. Fermentation is about a week in and it appears to have a pelicle forming but I can't tell since I don't know exactly what it looks like.
 
Wow,wlp sour mix is the lambic blend,right?
That is going to take SOME time to sour.
I am looking at having this in the bottle at the two week mark.
 
There was no visable active fermentation this afternoon,so I pitched the Bell Saison.
Fermentation picked up again within 5 minutes!
