So, I've brewed up the Chimay Grande Reserve clone as described in the book, "Beer Captured" by Tess and Mark Szamatulski. I'm ready to bottle this stuff in a couple weeks.

I love a nice IPA and I have grown and vacuum bagged some Cascade and Centennial hops. I was considering pulling a gallon of the batch and tossing in some hops just for the heck of it.

Someone talk me out of it. Or not. :-) I'm probably going to do it anyway, so how much whole, dry hops should I add to a gallon? Preference of Cascade or Centennial? I realize I won't get the bittering, but it might be interesting anyway. I'll try just about anything once.
