backwards- AG to partial

Ginger beer- could probably do all grain, but if I opt to go partial, how would I substitute

2 lbs of Pale Malt 2 row us and about .625 (just under 3/4) lb of Cara Pils-

Is there even a way to do it, or is it even worth the effort?

I don't have a mash tun or any of the AG stuff, could I just maintain temperature in a regular container, pour water over top for appropriate boil amounts and resume boiling and adding ingredients?

I've only done partial, so making sure I get the proper idea here.

2 lbs of Pale Malt 2 row us and about .625 (just under 3/4) lb of Cara Pils-

2 pounds of LME would work. It has both base and specialty malt in it and you would want to use about 75% of the grain amount when converting to LME. That will be close enough.
