Welcome back!
There are many ways to cut down brewing times.
I use the Anvil all in one Foundry and often split my brew day.
The night before brew day, I can mash and sparge. I then just let the wort sit in the aio overnight. I’ll set the timer and wake up to wort that’s just about to boil.
When that’s done I take the water I used from my immersion chiller and fill up the dirty aio w a pinch of oxiclean. If I’m busy that day, cleaning waits for another evening.

This way of brewing was the least impactful to family time. As you can see, sometimes a brew day turned into three days or so.

I hear you. It’s tough to brew with a 3 y/o and a 1 y/o. I have an electric BIAB setup. I mill grain, add water and salts then mash overnight. Next day I lauter then boil for 30-45 minutes. Clean up happens intermittently throughout the rest of the day.
