Hi All

Long time lurker first time poster. . .

With summer coming up (here!) the wife wanted something that bordered between a wine cooler and a sweet cider.

But, she likes it with a kick and a dry finish -- so I thought I'd give this a whirl.

Juice
One Gallon Organic AJ
Half Gallon Organic Mango Juice
8-10oz. Fresh Juice from 1 Medium Sized Pineapple

Add-ins
One Cup Water (for boil)
Half Diced Large Serrano Pepper (for boil)
Three TBSP Organic Honey

Everything Else
Half Packet Nottingham
Pectic Enzyme
Two Gallon Plastic Jug w/airlock

This all went into primary on 5/14. Airlock started bubbling slightly at 5/15 . . . looks like it will be a slow starter.

Interesting to see how this will turn out. Hopefully its more like a wine cooler than a Mead but should be good either way! Not sure when I'll aim for secondary but I'd like to bottle mid-July.
