Read a while back that quaternary sanitizers had a detrimental effect on beer foam (head), but not easily finding source. Good for external general sanitation, but perhaps should be avoided for anything with prolonged contact with the beer (like fermenters).
I assume bars shouldn't be using quat for beer glasses either. Some surely do since it's definitely a staple in commercial kitchens. I know the draft specialist suppliers (Micromatic and the like) supply bar glass sanitizers that are not quat-based.Good info, had not read that. I'd imagine this could also really be an issue at bars doing no-rinse on their glassware.
