I've been wanting to brew a DeuS clone for a long time. I've read all I could find about brewing this style (which isn't much, and is somewhat dated). I've read all of the stuff on the Maltose Falcon's website (good stuff guys), and have a copy of Brew Your Own with an article and recipe for DeuS, (I don't have / can't buy the Zymurgy from 2006 with a different article) but can't find much info outside of that from someone who has actually brewed the style.
If anyone here has brewed / bottled a champagne beer, can you talk about your experience here? How long did it take at various steps. how many / and which types of yeasts did you use? did you riddle and disgorge? how did that go and what technique did you use? How was the finished product compared to Deus (or other brand if you were trying to clone)? What would you do differently next time?
