I am stealing this idea from a fellow HBT and want to make a mead that I can enjoy once a year on my soon to be first child's birth. I know nothing about meads, never even tasted one. So it's fitting as I know nothing about raising a child. Can I age mead for 21 years and it still be good? Any recommended recipes? thanks!
 
There have been more than a few threads on this sort long term mead aging. If you do everything right, there's no reason it won't work. Just know in advance that it won't even start to taste good for a few years. With mead, time is on your side.

Use the best ingredients, make sure you have great sanitation, follow a staggered nutrient addition (SNA) plan, and make sure you have good temperature control, even for aging.
