my nb denny's rye smile ipa is going to the secondary this weekend and i already have the itch to brew again-... i'm thinking a red ale atop the denny's fave yeast cake. i'm going for a nice hoppy red ale something that's going to be caramelly yet w/ a nice hop punch.

i took 2 recipes and kinda combined them on brewer's friend and this is what i came up with-...

extract recipe.
og 1.056
fg 1.014
abv 5.5
ibu 39.62
srm 16.97

fermentables:
6lb amber dme
5oz corn sugar in boil <-delete?

steeping grains:
6oz caramel 40
5oz caramel 120
2oz roasted barley
8oz caramunich II

hops:
2.5oz mt hood @ 60 <-already have some in fridge
1oz cascade @ 15

yeast:
rack on to "dennys fave" cake from rye ipa

any thoughts or ideas?
 
May be too much yeast...(great debate) Get about 3/4-1 cup (sanitized cup of course) of the yeast then clean and sanitize your fermentation vessel then pitch... Other peeps will tell you it's ok.... both ways would work

do you think the grain and hop combo will give me the effect i'm looking for?

consider the corn sugar gone from the boil. thanks!
