so, i am always looking for deals, and ways to utilize different equipment to meet my brewing needs.

Does anyone see any reason why something like this would not work?

it is the 60 quart stainless bowl from a large bakery mixer...

That's a bit like using a Ferrari you got cheap to pull a trailer around the ranch.
Not ideal, but will get the job done. The smart move (if you are getting it for free) would be to sell it for enough money to buy a nice pot for brewing (maybe two 60 quart aluminum ones).
 
I dislike the narrow base...212 degree wort in that thing...one little nudge, and you're looking at 2nd or 3rd degree burns.

get a vessel that is meant to be put on a burner.
 
Sell it for $200 - $300 and buy a really nice pot. Hobart bowls are very expensive new and only slightly less expensive used. I'm curious where you got it since it looks new.

I assume you'd be using propane to heat this? Otherwise the base is inefficient for heat transfer on a flat surface (stove) and it will be difficult to boil. If using propane I guess it would work.
