Seeing as it was intended to be a 2 gallon kit and its currently about 3 gallons I'm gonna add some light corn syrup to up the alcohol content.

I always lean away at a steep angle from expired product--spices, dry goods, jarred/canned, extract. I call it more of a personal choice than anything else.
With beer, I don't want to waste time or guess or hope that a beer I make will be good. Use By dates aren't exact but they can be useful.
I don't even use LME now because I can't be certain how my LHBS handles it or how old it is.
 
The fermentation seems to be slowing... used a stainless steel pumice stone and some bottled medical grade oxygen I got years ago at a garage sale for free to gas it a little... The experiment continues!!!

More power to ya! From one who can't stand waste, and is not finicky about expiration dates.

I'd never brew crappy beer on purpose, but fer the cryin' out loud, I bet this batch will be better than most commercial beers were 30 years ago. Somehow people managed to get by in those bygone days, and given appropriate expectations I suspect that this batch will be just fine.
 
Updated added in 3/4 of a bottle of Herseys chocolate syrup. Foamed quite vigorously overnight. Plan to bottle some next week to test.
 
Update, Added a teaspoon of Years nutrient and the leftover hops sludge from the bottom of the pot of my White House Honey Porter 1 gallon kit. The experiment continues.

I forgot to post the results of this experiment. It ended up being a weird sour banana tasting beer. I would guess this is what the beer in the story 1984 would have tasted like.
