I brewed this batch about 5 weeks ago. After a week in the bottle I decided to try one, and it was a delicious smoky flavor that settled nicely into a nice banana/citrus flavor. I tried one about a week later and the smoke flavor had diminished to being very quick and subtle and ending up in a strong banana finish, but I noticed a bit of alcohol bite/warmth. I'm having a couple now and the same tendency remains: light smoke, alcohol bite, and finish with a banana.
I'm wondering what could cause the alcohol bite and how to reduce it in the future.
3lbs Wheat Dry Extract
4lbs White Wheat Malt
1lb Flaked Wheat
2lbs Pilsner malt
1oz glacier (60 min)
1oz citra (5 min)
1oz sweet orange (5 min)
Wyeast Belgian Wheat Yeast (3942)
90 min mash @ 154
Batch sparge @ 170
Boil 60 minutes
