Hi all,

So here in Japan people make this stuff called 'enzyme juice'. They mix water, some fruit, and sugar, and let it sit at room temperature with open access to air. They mix it twice a day with their bare hands. The idea is that the yeasts in the air and on your hands will inoculate your drink, and after a while you have a healthy liquid that's full of enzymes.

That seems to me like the best case scenario, with lots of things that can go wrong along the way. Seems like making rejuvelac (wheat berries fermented in water at room temperature for a couple days) or something similar would be a lot safer.

Anyone have any ideas on the validity of this drink they're making?
