So I brewed 2 batches Sunday morning and got them in carboys around midday after pitching a yeast starter in each carboy. I ran out of the 'S' type airlock and only had the cup type left. Well I had it filled with starsan with the lid on but I forgot to put in the internal cup thing that actually makes the seal. Therefore, I essentially had open fermentation for about 36 to 48 hours until I realized it this morning.
Now looking at the lid, the air holes are very small so odds are I'm ok. But what are the chances I just made 2 sour IPA's?
