I was going to brew another batch of None More Black Vanilla Stout and was toying with leaving out the vanilla and turning it into a Chocolate Milk Stout. Any advice on how to go about it?

Just use cocoa powder in the boil as well as lactose. You can also throw cocoa nibs into the secondary. Just don't use bakers chocolate because it has oils added to it that can affect body and head retention, or so I've been told I always use cocoa powder so don't know the truth behind it.
