Advice Needed for Adding Fruit to Kettle Soured Gose

I”ve never added fruit to my brews and I’m pretty new to kettle souring, as well. I will be adding some flash frozen (not pasteurized) Pitaya (Dragon Fruit) after my Gose goes terminal. I was thinking since there will be alcohol and low pH at that point just throwing the fruit in without pasteurizing might be ok. Anyone done anything similar and not infect their beer, or have thoughts in general?
 
There is a risk of contamination if you don't pasteurize. Whether you want to take the chance is up to you.
