*Advanced* Brewing Techniques Books

Hey all,

I'm looking for some good books on more advanced brewing techniques. In all the threads I've come across on this subject, more intermediate books have been recommended. I'm looking for some stuff that will dive into some chemistry, temperature controlling, fermentation techniques, etc.

Any suggestions?

Brewing Science and Practice by Briggs et al is pretty epic. Some knowledge of basic chemistry is definitely recommended.

"Brewing Better Beer" by Gordon Strong.

 

[Denny's Evil Concoctions]

"Principles of Brewing Science - A Study of Serious Brewing Issues" 2nd ed by the late George Fix.

If you like Belgians then the BA's book about belgian beers is a good read, more for technique than science. I can't find it right now or I would state the title/author.
