I cooked up my blonde ale last night but had a family emergency and had to rush out the door so I didn't have time to let it chill properly. I looked at my batch now and its at 78 still ugg but ferimintation is going well. Do you think this will ruin the taste? My plan is to make a stawberry banana blonde but I might want to leave the flavoring out do to this incase. I dont know what do you guys think ?
 
I wouldn't worry - not much you can do anyway! I have made plenty of beers where I pitched warmer than is advisable - though frankly people tend to get really fetishy about yeast around here so "advisable" is a moving subject - and every one of my beers have been either fanf0ckingtastic or pretty bloody good.

To put it another way: I bet this will be good and you might want to repeat your "mistake" next time after all your friends drink the beer and say "wow man... you made this?!"
 
Well last time I did this it came out great but a lil apple cidery but I think that was the cascade hops. I'm more worried about adding my flavoring honestly... THANKS FOR THE ADVISE :)
 
I did this on my first batch of beer - pitched high and fermented high... It came out with a bit of a harsh alcohol taste that may have gone away if it weren't finished off so quickly! I only bottle conditioned for 3 weeks and most of the batch is gone because family and friends loved the beer. I was the only one who wasn't a huge fan of it. The last couple bottles I have will be gone this weekend (I held them as long as I could (2 extra weeks) to see if they smoothed out a bit).

I bet you'll be fine with or without flavoring!
