At least it's a dry cold! Although, stepping outside kind of feels like getting drop kicked in the nuts.

Hey I have a project in Edmonton, great city!

It's not that bad when it's really cold...I went to elementary school when it was -20.. Had to build a fire under the oil pan of our diesel truck to get it started. I love when it's that cold!.. Except now I live in Georgia and they think 40 is cold here.

@TheMadKing , great to see you two again! Yesterday was an awesome brew day so glad you both came over. I can't wait to see how these Barleywines turn out. I was most impressed by the brewing support crew that you brought and how well you two worked together. She has her sh*t together as a brewer and has a much better beer palate than I.

The only glitch in the whole day was you forgot to take your cat when you left.
No problem, we'll work that out. :D

Thanks man! It was a great brew day, especially for brewing on a mobile kit and being outside of my normal routine. I appreciate you hosting and feeding us.

Why do you think I put a ring on it!? Microbiologist + good pallet + loves beer + enjoys brewing = keeper.

Miss Moo just looks too content eating your chipmunks and birds to bring her up here :D

The barleywine is chugging along at 68, with no blowout surprisingly. I'm at the tail end of high krausen right now and it's well below the lid. I actually took out the blowoff tube and put and airlock back on. We also blew another keg today (I need to start a tracking system), so we may do an emergency mid-week brew of an ESB that will have a quick turnaround.

Sounds like a good day. How strong a barleywine did you two make?

We started with the same base recipe and each tweaked it a little bit. Mine ended up being 1.120, and I'm fermenting with WY1728 Scottish Ale yeast. It should be a monster.

He had more volume into the fermentor than I did, so I think he ended up at 1.098 or somewhere in there, and fermenting with Irish ale yeast.

I need to make some bigger beers. I like to drink them. I can just get two batches out of one, they are fairly good efficiency as well, by keeping abv down. I heard a podcast talking about the only reason efficiency goes down is people don't use enough water. Appreciate any tips

12%, at least in my case, need special attention.

So I'll brew a 6% version first to build a nice yeast cake. Once ready, the 12% gets divided between 2 buckets. Be sure to oxygenate the **** out of it. After 12hrs, reoxygenate again, this is critical. Keep separate until ready for secondary transfer. That way there's plenty of head space.

Brewing on a friday afternoon! I was supposed to brew earlier but life got in the way.

Emergency Santa Beer ESB will hopefully be done by christmas day!

Well it is official, I am work free until January 3!

Working for a University has its advantages.

I had to work the day after Christmas and use personal leave to take new years eve off when I worked for a University.. Now I just work for good people and I get it off too..cheers! Enjoy the time off!

Solid. Key tip on head space, thanks.

We have a campus wide shutdown, for "cost savings", does not come out of our time.

Thanks! I will have plenty of time for woodworking and hopefully brewing.
