Got a dilemma: my plan was to take the saison I brewed yesterday w/sompls and split it into two 2.5g batches. Both would be 100% Brett. I did a starter for both Brett strains, but one of them just didn't take off. I pitched them last night anyways, thinking the one could just be a slow starter. But of course that one is still showing no activity. Knowing Brett can be a slow starter I'm not to disturbed.
BUT- if that batch never actually takes off then maybe I should have a backup plan? I could order the Amalgamation blend from TYB, but it will be a couple days before it arrives and even then I need a week or so to build up the cell count. The beer could have spoiled by then. So should my backup plan simply be to pitch a saison strain instead?
