You can tell the multi million $$ brewery owner/master that you heard from some doofus guy who googles a bunch of chit and makes 5.5 gallon batches every couple of weeks, that they're doing it all wrong.

I'm sure they'd be receptive.

May as well close the doors and burn the place down for the insurance money because science.
