You're fine - the yeast may be a big sluggish from being cooler than they'd like, but you don't really get off flavors from that. Just slowly bring it back up to where it should be and they should wake up and finish.

Generally true, but some yeasties will give off-temps when too cold, like US05 and the dreaded peach. Worst beer I've made was due to that.
 
Foul mood, foul avatar. Not seeming so "friendly" anywhere on this site lately. And that "air conditioner" works. It's what my friends do because they think it's cheaper than a window unit.

Question for you folks re: Ward Labs test.

W-5A Brewer's Test: Sodium, Calcium, Magnesium, Potassium, Carbonate, Bicarbonate, Chloride, Iron, Sulfate, Nitrate, Electrical Conductivity, Est.Total Dissolved Solids, pH, Total Hardness (Lime), Total Alkalinity & Total Phosphorus

W-5 Household Complete: Sodium, Calcium, Magnesium, Potassium, Carbonate, Bicarbonate, Chloride, Sulfate, Nitrate, Fluoride, Iron, Electrical Conductivity, Est. Total Dissolved Solids, pH, Total Hardness & Total Alkalinity

W-6 Household: Sodium, Calcium, Magnesium, Potassium, Carbonate, Bicarbonate, Chloride, Sulfate, Nitrate, Electrical Conductivity, Est. Total Dissolved Solids, pH, Total Hardness (Lime) & Total Alkalinity


The W-6 is ~$9 cheaper, and looks like the only difference from the W-5A is phosphorus and iron. Phosphorus doesn't seem to be listed on the Brun Water spreadsheet... and I know from my city water report that there was no iron present.

Or should I just spend the extra $9 and stop being such a cheap funker?


Our water companies have to publish water composition reports. They're pretty comprehensive and sampling is regular enough to know it is going to be current.

Your water suppliers must be collecting this data for regulatory and treatment process reasons- don't they publish it or provide it on request?

They definitely are required to sample and test frequently, but not publish. You're lucky to get a yearly report from the website. Can probably call and find out if you want to dig through some bureaucracy phone-tag.

Our tap water was picked for sampling a couple of weeks ago so the next update will be a personalised report. I was joking with a home brewing colleague recently about opening a remote connection to the process works, adjusting the dosing rigs and tailoring my supply to any water profile I fancy. "This week we'll be mostly drinking Burton on Trent water until I've got enough English IPA in the pipeline."
 
My motivation to work has been going down, down, down today. So I've been reading about mash pH, water profiles etc for all grain.

... I'm so confused.

looks like there is a rumor that AB-Inbev is looking to buy Cigar City. I hope not but nothing I can do to stop it lol.

If I had a dollar for everytime I've heard that rumor, I could outbid ABInbev.

Money talks for example one of the biggest cigar manufacturers said they weren't selling out either and gusse what swisher sweet now Owens them.

I'm sure Joey, like everybody, has a price. So far, though, this has been rumored several times, and all the bloggers fall all over themselves trying to scoop each other and be the first to post about it. Hasn't happened yet, though, so until CCB announces it, I'll go with the Tampa blog version over the California blog rumor.
 
A lil DEM on lunch. I feel a bit tipsy. Off of a single sub 4% beer. Cant be right. I think I have a drinking problem. I need to practice and get better.
