Another of my IPAs that didn't happen since I'm not in a picture taking mood. It's not even 10 yet and I'm honestly considering calling this my nightcap.

Surface area plays a big part in it. Oak chips generally get you the most oak because there are a lot of nooks and crannies which equal a lot of surface area. Small barrels have more surface area contact compared to large barrels. They key is to take small samples relatively often (maybe every other week at first and then every week when it starts to get close) and stop when you hit the profile you're going for.

Make sure you find out when they were emptied and what kind of spirit (if any) was aged in it. They will dry out after a bit and leak. My barrel was rye whiskey, but was emptied about 6-8 months before I got it. I soaked it in water to get the outside holding a seal well, and then rehydrated the inside with 100 proof bourbon (you need at least 100 proof for killing most things). Kept rotating it every 45 minutes when I got home from work for a week.



Depends on how much coffee you want and what kind of coffee. I used about 12 oz for this, but I'm going to sample often and keg it as soon as I think it's right. Cacao nibs, I usually use about 2-4 oz per 5 gallons depending on how big a beer. Soak them in either 100 proof bourbon or rum (I prefer rum for cacao nibs) to sanitize (just enough to cover them), and pitch the whole mess in.

Giving me tons of stuff to learn about. Can't wait to try to put it into practice. Probably going to have to invest in a cooler MT to brew 5 gallons of a big beast of a beer, stove top. My current setup won't cut it.

Nay. We use clear silly straws. You have to be able to see the color of the beer in order to score it.

I'd imagine they are extra curly/silly to accentuate any hipsterishness/orgnic/ethically sourced/box-troll friendly qualities that were incorporated into the brew.

I envy your knowledge sir.

I'm going simple today. Just making a crap load of wings an maybe some peppers. Haven't decided.
 
I'd planned on going to the gym between batches today. Not happening apparently. I was told they were closing early Friday but should reopen Saturday (which I didn't believe). Not only did they not reopen Saturday, closed the entire weekend. Not surprising, but frustrating. Not enough room in here to get a decent workout, but I'll have to find a way to improvise. Ugh.

Coffee.
 
Breakfast done. Coffee done. Now time to prep for church and clean the house as there's a play date here at noon. May try to sneak in a coffee stout here before church when the mrs takes a shower.
 
I'm not hungover, but if I were, this would be the breakfast. Using up stuff in my fridge. Chili, hash brown patty, eggs and cheese. It looks like a belly ache on a plate because it was.

Oh and drinking orange juice.

I need that right now. Instead all I have is a mild hangover and a dog begging to go outside and play fetch.
