made an all grain oatmeal stout back on dec 13 with wlp007 dry English ale yeast in a starter of 1.3 L the og was 1.063 the resting G is 1.026 ten points high mashed at 156 degs F. I did O2 it for 1min and 30 sec. with pure O2 and stone tried to revive it with some old lalvin ec-1118 hydrated and pitched, then was recommended to make a starter with the same but new pkg from homebrew store and still nothing. So I was thinking of transferring it out of the ale pale and into 5 gallon carboy and a pkg of white labs Brettanomyces and some bourbon barrel stave chunks.
how do you think it would go? if good which strain would you use? if not so good what do you suggest to get it going? I am getting afraid that the beer has been in the fermentor a long time and I've opened it a few times might have lost the co2 blanket . last should I just accept the 10 points get it in a keg and drink a sweet stout?
